A contemporary collection of indigenous Languedoc varietals.
The old, bush-trained vines are dry grown, conserving water to increase grape quality as well as supporting regional traditional viticulture and low farming inputs.
The wines are made in a style that clearly expresses their varietal typicity and sense of place.

Our Viognier grapes are harvested from the cool, coastal vineyards around the Etang de Thau - the second largest lake in France. It is here some of the most distinctive Viognier is grown and crafted to display purity of fruit and a distinctive 'goût de terroir'.
The aromatic Viognier produces its aromas at a certain stage of maturation. Our winemaking team taste the grapes in August, to choose the right day to harvest. Post-harvest the grapes undergo a short skin-contact maceration. Then, the juice, after a delicate pressing and meticulous off-settling, ferments at low temperature.

Mont Rocher Carignan Vieilles Vignes is produced from 50 year old, low yielding vines growing on rugged limestone rich soils, in sun drenched vineyards of the Pyrénées foothills. It is here some of the most expressive Carignan is grown and crafted to display purity of fruit and a distinctive 'goût de terroir'.
Although this wine is made with an old traditional grape variety, the vinification was carried out in a modern style. The grapes are de-stemmed, crushed and fermentation is carried out at controlled temperature, around 23°C . Ageing is carried out in tanks with a small amount of French oak staves to add more complexity and roundness to the wine.

malbec, VIEILLES VIGNES

Our Malbec grapes are harvested from high altitude, hillside vineyards in the Haute Vallee of Limoux, which sit on rugged limestone rich soils. It is here some of the most expressive old vine Malbec is grown and crafted to display purity of fruit and a distinctive 'goût de terroir'.
Picked at their optimal ripeness, in mid September, the grapes are de-stemmed then crushed, finally they undergo a three weeks maceration in order to carefully extract all their quality. The extraction is made by pumping over during the first ten days of maceration.

CABERNET FRANC, VIEILLES VIGNES

Grapes are harvested from high altitude, hillside vineyards in the Haute Vallée of Limoux, which sit on rugged limestone rich soils. It is here some our old vine Cabernet Franc is grown and crafted to display purity of fruit.
Picked at their optimal ripeness, in mid September, the grapes are de-stemmed then crushed. There is a cold pre-ferment maceration for 5 days, before a classical fermentation for 8 to 10 days in stainless steel tank. Malolactic fermentation before bottling.

Cinsault grapes are harvested from selected sites in the heart of the Languedoc, between the Black Mountains and the Canal du Midi. It is here some of the most outstanding Cinsault is grown and crafted to display purity of fruit and a distinctive 'goût de terroir'.
The grapes are checked throughout August, in order to choose the right day to harvest. Post- harvest, the grapes undergo skin-contact maceration to extract soft pink colour from the skin. The juice, is collected after a delicate pressing and fermented at a low temperature in stainless steel.
